Backposting, this is also one of the cookies I made for Chinese New Year. Pictures of peanut cookies seem to be 'flying around' everywhere and so the idea of a peanut butter cookie came to my mind. Something not so traditional but yet made from peanuts :) I love the idea of an unconventional cookie ;)
A point to note: if you like softer cookies, you can use all brown sugar. However, if you prefer a crispier cookie texture, try 160g brown sugar and 40g caster sugar and bake it for an extra 5 minutes.
