Almond Cranberry Cookies

This is probably one of my last backposts.

Yet again, I have decided to bake a not-so-traditional cookie for the Chinese New Year. I stumbled upon this recipe - almond cranberry cookies. With my new 'silpat', I decided to give it a try so no using of greaseproof paper. Does this help to save the environment by not throwing away paper? Perhaps so.
Anyhow, I adapted the recipe from Cook.Bake.Love who was inspired by J3ss Kitch3n).
