Today was a lazy day so asked Mr G what does he want to eat? He said let's have some fried chicken to go along with your coleslaw :) Sounds like a pretty good idea! What do you guys think?
Anyhow, I managed to dig out some of the recipes that I sourced and bookmarked them. Yes, I found one which is very suitable.
The recipe is adapted from myrecipes.
Ingredients:
- 3 cups cornflakes (crushed)
- 1/3 cup grated Parmesan cheese
- 1/2 tsp salt
- 1-2 tsp paprika powder (Mr G likes his hot)
- a few dashes of pepper
- 1 cup milk
- 1 tbsp lemon juice
- 1 packet of chicken drumsticks (about 900g)
If you do not have buttermilk like me, you can use 1 cup of milk and add 1 tbsp lemon juice into it and let the mixture sit for about 5 minutes.

While you let the buttermilk 'sit', you can do the dry mixture. Mix crushed cornflakes, Parmesan cheese, salt, paprika powder and pepper by putting them into a ziploc bag. Seal and shake to mix well.

Then you dip the chicken drumsticks into the buttermilk, about 2 pieces at a time.
Thereafter, you put the drumsticks into the dry mixture. Seal the ziploc bag and shake well to mix thoroughly.
When you are done with it, place the chicken drumsticks onto a baking tray lined with baking paper.
Lastly, place the cornflake mixture onto the top of the chicken before you put it into the oven.

Yes, I have to admit it looks like a cornflake mess at this glance. But trust me, it'll turn out nice.
Without further delay, put it into a preheated oven at 160 degrees celsius (adjust your oven accordingly) for about 25-30 minutes. After 15 minutes, you may wish to turn the chicken pieces to make sure they are cooked on both sides.
Check out mine in the oven! For a split second, I thought they have an uncanny resemblance to KFC ;)
Finally they are ready to be eaten.
