Potato salad

Sunday is a lazy day but decided to make potato salad after seeing the Japanese potato salad my sister made :)

Here's my rendition of the potato salad adapted from foodfrommyfamily.com.

Ingredients:

1kg potatoes (cubed)
1 pack of bacon
4 hard boiled eggs
some spring onions or green onions (chopped)
some parsley (chopped)
1 bottle of low fat mayonnaise or ranch dressing (whichever you fancy)

Method:

Boil the cubed potatoes until tender, drain, rinse with cold water and refrigerate.



Bake bacon in the oven for about 15-20 minutes at about 160 degrees or till dark brown. Drain bacon on paper towel and cut it in strips when cool.


Coarsely chop the hard boiled eggs with a fork.


Add bacon, eggs, chopped spring onions and parsley to the cooled potatoes.


Stir in mayonnaise and season with salt and pepper. Then refrigerate until ready to serve.
