Chocolate-Orange Cake

Apart from the fact that Nigella is all about chocolate chocolate and more chocolate, I also love the fact that she makes her recipes so simple that anyone and yes, anyone can follow them. This is the beauty of this recipe too. She calls it pantry-shelf chocolate orange cake. Literally, it is a cake with hardly much fuss. You just need to throw all in and voila, bake them in your cake tin and then you can go do whatever you want to do.

This recipe from her book 'How to be a domestic goddess' is definitely a keeper for rainy days or when you just don't feel like going out but you still want a cake ;) 

Ingredients:


113g unsalted butter
113g dark chocolate
300 grams of good quality orange marmalade
112 grams of sugar
a pinch of salt
2 large eggs
100g self-rising flour (I used 100g cake flour and 1 tsp baking powder)

Method:

  1. Melt the butter slowly in a heavy-bottom saucepan. When it's almost melted, add chocolate pieces, stir and take off the heat. Stir with a wooden spoon, until chocolate has melted.
  2. Add the marmalade, sugar, salt and eggs. Stir thoroughly (it's okay to leave small visible chunks of marmalade in the batter).
  3. Add sifted flour, stir and pour into a buttered and floured 20-22 cm loose bottomed cake tin.
  4. Bake at 180˚C oven for 45-50 minutes, until the cake has set (test with a knife or wooden stick).
  5. Leave to cool in the tin for about 10 minutes, then slide onto a plate.

Look beyond that dimpled cake and you will taste a cake that is so moist. Can I tell you a tip? Keep it for the next day when the flavours have developed together. It tastes even better!
